The Cancellarese sausage has very ancient origins but the first news about its production date back to 1700. The families of Cancellaresi keep to the oldest and most consolidated tradition, dedicating themselves carefully to the breeding of pigs, slaughter and the subsequent bagging.
The right balance between lean and fat, the use of spices such as Senise pepper in powder and wild fennel, the use of the fireplace for the delicate drying phase, give Cancellara sausage a pleasant, unmistakable taste.
